Coconut, Ginger, Lime and Burnt Orange Oats



1/2 cup oats
300ml coconut milk
6 orange segments or 1 whole mandarin, peeled
Knob of butter
1/2 tsp brown sugar
1/2 tsp finely grated lime rind
1/2 tsp finely grated ginger
5 cashew nuts chopped into small pieces



  1. Combine oats with coconut milk, bring to the boil then turn to simmer and stir regularly for approx 4 – 5 minutes.
  2. Meanwhile add butter to a medium-low heated frying pan and add orange segments. Cook until caramelized and orange flesh has a ‘burnt’ look. Remove segments from pan, set aside. Now add a tiny splash of hot water to the pan and gather the juices together. Remove from heat.
  3. When porridge is ready add the ginger, lime and sugar and mix together well.
  4. To Serve: Pour porridge into a bowl, scatter with burnt orange segments, pour over the juices from the pan and sprinkle with chopped cashew nuts.
