Sumac Lamb Skewers with Flatbreads: Tasty spiced lamb skewers for summer BBQ’s or any other time of the year pan-fried or on a griddle.

*Notes: Marinate meat overnight for more intense flavour



Sumac Lamb Skewers with Flatbreads
Serves 4


2 tsp sumac
2 tsp cumin
2 tsp coriander powder
2 garlic cloves, minced
Salt and Pepper
1 kg chopped lamb shoulder
Splash olive oil
200g yoghurt
Juice of 1/2 lemon
Handful mint, chopped
150g feta, crumbled
Lime wedges to serve

Flatbreads (makes 8)
480g flour
Pinch salt
Drizzle olive oil



  1. For the flatbreads: Place flour in a bowl and add salt and olive oil. Next add small amounts of water to the flour, mixing in to form a dough. Do this slowly until it’s nice and firm. If you add too much water and it becomes wet just add more flour to bring it back. When dough is smooth cover in cling film and set aside.
  2. Soak 12 skewers in water for 10 minutes.
  3. Combine Yoghurt, lemon juice, salt and pepper. Set aside in the fridge until needed.
  4. For the meat rub: In a bowl combine sumac, cumin, coriander, garlic and olive oil, mix together well. Add lamb and rub the spices in well. Season with salt and pepper.
  5. Thread lamb evenly onto skewers. Heat some oil in a frying pan and cook over medium heat until browned on all sides and just cooked through.
  6. Heat a griddle or frying pan. Divide flatbread dough into 8 pieces and roll out as thin as you can. Fry in hot pan approx 1 – 2 min on each side.
  7. Plate skewers, drizzle with a little olive oil, squeeze of lime, sprinkle over feta nd chopped mint. Serve alongside flatbreads and salad of your choice.
