Recipe: Vegetable Cashew Stir-Fry with Oyster Sauce

 

Cashew nuts add crunchy texture to this satisfying vege stir fry.

 

Vegetable Cashew Stir-Fry with Oyster Sauce
Serves 2

 

INGREDIENTS:

1/2 savoy cabbage or 1/4 Chinese cabbage
8 mushrooms
2 large handfuls Asian sprouts
1 small carrot
3 spring onions
1 red chilli
1/4 cup cashew nuts
1 tbsp Soy Sauce
1 tbsp Oyster Sauce

 

METHOD:

  1. Dry roast cashew nuts until coloured, be careful not to burn. Chop into small pieces and set aside.
  2. Add some vegetable oil to a hot frying pan or wok and distribute evenly. Cook vegetables, tossing regularly. After a few minutes add a splash of water to create steam. Cook continually tossing vegetables until water has evaporated.
  3. Pour over soy sauce and oyster sauce, toss well.
  4. Remove from grill and serve garnished with red chilli slices and cashew nuts.
